Winter
Winter is when the big pots come out. This is the season of slow food. The kind of food that you throw into a heavy casserole dish and then forget for a couple of hours, allowing the combination of heat and great produce to work its alchemy with very little interference from you. Then just lift the lid and gather with friends around a pot of rich velvety meat or hearty vegetables. This kind of food needs little more than a side dish of creamy mashed potato or spicy couscous to turn it into the culinary equivalent of a soft thick blanket. Winter – now we’re talking, creamy, white wines absolutely bursting with flavour such as Chablis 1er Cru – the king of chardonnay chilled but not too much and as the room warms the wine the flavours just explode onto your tongue. Big, big reds are definitely in this season and Amarone a valpolicella from the house of Bolla is quite simply ‘liquid love’. Snuggling up on a sofa with a ‘good’ friend sipping this wonderful wine in front of the embers of a dying fire is what winter is all about.
