Fresh out of the Bleu!

Bleu Grill & Wine Gallery in Dolphin Lane is now very well established as one of Southampton’s finest restaurants with a quite unique Wine Gallery where a range of quality wines start at just £9.95 a bottle. The delightful atmosphere is distinctly that of a French bistro and is completely in keeping with its location within the Dolphin Hotel, one of Southampton’s older and most historic buildings having originated in 1390.

Owner Bob Musker has always sought ways to improve the product and service of the Dolphin, Fruit Bar and of course Bleu Grill & Wine Gallery and it is to this end that two recent and very special appointments have been made.

Sebastian Ryder joined the Hotel in January of this year as Food & Beverage Manager with his duties include full responsibility for Bleu. Sebastian has spent his working life in the ‘food & drink’ industry having managed many fine public houses including The White Horse in Romsey plus many ‘Real Ale’ venues throughout the south and before joining the Dolphin he was a trouble shooter for several brewery chains.

The Fruit Bar was Sebastian’s first challenge and in just one month he has restored this popular night venue to its former decadent best – now it is the turn of Bleu! Also a talented amateur photographer, visitors are able to see some of Sebastian’s stunning black & white photographs adorning the walls of Fruit.

‘Coming to the oldest hotel in Southampton was in itself very attractive and it gives me a wonderful opportunity to make real use of my Innkeeping skills, hospitality and hosting background’ commented Sebastian.

In October of last year Mr Musker decided to take on a new Sous Chef to complement the well-established kitchen team with a remit to introduce new and exciting dishes onto the menu and the specials board for lunch and dinner. Having trained with the best Nick Chiari recently developed his skills with the Chilworth Manor and Balmer Lawn Hotel before joining Bleu and the Dolphin Hotel. All chefs have their own food hero and Nick is no exception naming Gordon Ramsey as his personal favourite chef.

On a family note, Nick and his partner Gilli – also a trained chef – eagerly await the birth of their first child expected on Friday 9th February!
Examples of Nick’s creative skills can be seen on both the lunch and evening specials with mouth watering dishes such as escalope of veal with red currant, marsala wine & cream sauce; pan-fried fillet of lemon sole, king prawns, oyster mushrooms and caper butter and honey roast duck breast with a ginger jus to name just a few.

‘I am really enjoying the opportunity and the time to create my own dishes under the watchful eye of such experienced chefs’ said and enthusiastic Nick.
Bleu’s comprehensive a la carte menu offers traditional delights so rarely seen these days with more creative contemporary dishes all competitively priced such as ‘bubble & squeak’ with bacon sauce at £4.95; potted shrimps with melba toast at £5.95; 8oz Bleu Tornedo with crouton, pate and red wine and port sauce at £16.95 and Calf’s Liver and bacon served with mash just £13.95 plus much more.
The daily specials are always interesting and great value but you really should check out the special 2 course lunch menu at £7.95 and the dinner menu at £9.95 – fantastic value but only for a limited time!
